Highland Ground Beef Meatloaf Recipe from Jann Ramey

This meatloaf was served at the HHCA annual meeting luncheon, recipe from Jann Ramey

2 lb. Ground beef
1 large carrot; 1 med. onion
1 stalk celery
1 or 2 cloves garlic
2 eggs
1 tsp salt
2 Tbs ketchup
2 tsp prepared mustard or 1 tsp dry mustard

Blend carrot, celery, and garlic in food processor. Just so it is in small pieces. Whip eggs and add oatmeal to point where oatmeal is all moist. Add ketchup and mustard along with salt and carrot mixture. Mix in beef.
I make small rounds  (about 7 or 8)in a 9 x 13 pan. Make an imprint - with knuckle in each and add topping.

1/4 c. ketchup
Squirt of mustard
Brown sugar to taste

Put in knuckle holes and then spread over loaf.
Bake 350 for 40 to 45 min. for small individuals or hour or so for large.
You can also crock pot for a couple hours til hot and done in the middle.
